Ripened sheep’s milk cheese
“Il Vero Formaggio Scoparolo” takes its name from an old local tradition.
Some years ago, in rural houses it was custom to keep cheeses in cool places such as broom cupboards as the cellars were already full of wine barrels and grain. These places contained mainly tools and brooms made with broomcorn. The cheeses were placed on the wooden shelves to aid their maturing and brushed, turned and oiled with care by the farmer. When the farmer asked the stable boy to get the cheese he would say “Fetch me the Scoparolo!”, precisely because these cheeses were kept among the brooms (scopa is the Italian word for broom).
Today “Il vero formaggio Scoparolo” is the cherished result of an artisan process which lends an unmistakeable rich full flavour that represents the tradition of Romagna.
“Il Vero Formaggio Scoparolo” is a registered trade name of L’Antica Cascina.
The culinary research and the modern conviviality, made of finger food, happy hour and dinners with friends, led to the discovery of the “game of pairing” with wine and jams.
In this game there are no rules, except those dictated by personal tastes, the important thing is not to forcefully force your preference.
