Gold is a “type 00” soft wheat flour obtained from a particularly careful mixing of the best national grains and a higher percentage of the best North American grains, ideal for the preparation of doughs that require long leavening times and which they use cold technology for ripening.
This flour, characterized by high tenacity, is best expressed if the right maturation times are observed, which will lead to a very soft, fragrant and above all digestible pizza.
The dough obtained with this flour needs to rise from 12 to 24 hours, at a temperature of about 25 ° C.
