Asiago is a DOP cheese made from cow’s milk, produced in the regions of Veneto and Trentino-Alto Adige. There are two main varieties: Fresh Asiago, which has a soft texture and a sweet, mild flavor, and Aged Asiago, which is firmer with a stronger, more piquant taste. It’s excellent to enjoy on its own, grated over pasta or risotto, or used as an ingredient in many Italian recipes.
