Parmigiano-Reggiano, also known in English as Parmesan, is a hard, granular cheese, cooked but not pressed, named after the producing areas near Parma, Reggio Emilia, Modena, and Bologna (all in Emilia-Romagna), and Mantova (in Lombardia), Italy.

It looks like soluble, crulmbly and grainy perfectly balanced between sweet and tasty. It’s great combined with red wines quite structurated and it’s perfect cutted in petals in a salad. You can also combine it with dried fruit at the end of a meal.
