Strangozzi, also known as Stringozzi, Strengozzi or Umbricelli, is a long pasta traditionally associated with Umbria. It is thicker than standard spaghetti, with a slightly irregular shape and a rough surface that holds sauces particularly well.
This version from Antico Pastificio Umbro is artisan-made using 100% Italian wheat, bronze-drawn and slowly dried at low temperature.
How to use
Strangozzi is particularly well suited to rich and hearty sauces, especially ragù, mushroom and truffle sauces. It also works beautifully with tomato sauces, salsiccia and other flavourful Umbrian-style sauces.
For a genuinely Umbrian combination, try it with extra virgin olive oil, garlic, chilli and tomato.
