The “Salumi del Castello” sausage takes shape from a careful selection of the best parts of the pork – the shoulder and the underside – coarsely ground together with lard, salt and chilli sauce. A special product, worked according to the dictates of tradition, stuffed into natural pork intestines subsequently perforated and hand-woven to obtain the classic horseshoe shape. A typical product, available in both the sweet and spicy version, which arrives on the tables after a maturing period of at least thirty days and with the characteristic scent due to the smoking process.
